Ingredients

1 lb ground beef

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 medium onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

1 can (6 oz) tomato paste

2 cups beef broth

2 tbsp chili powder

1 tsp cumin

1/2 tsp paprika

1/2 tsp salt

1/4 tsp cayenne pepper (optional for heat)

2 tbsp olive oil

Fresh cilantro or green onions for garnish (optional)

Instructions

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Brown the Beef: Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook for about 5-7 minutes, stirring occasionally until browned and cooked through.

Combine Ingredients: To the beef mixture, add the diced tomatoes (with juices), tomato paste, beef broth, kidney beans, black beans, chili powder, cumin, paprika, salt, and cayenne pepper (if using). Stir well to combine all the ingredients.

Simmer: Raise the heat to bring the chili to a boil, then reduce to a simmer. Cover partially and let it cook for about 15-20 minutes, stirring occasionally. This allows all the flavors to meld beautifully.

Serve: Once thickened to your liking, taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro or diced green onions if desired.
