1 lb ground beef

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon paprika

Salt and pepper, to taste

8 small corn tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheese (cheddar or Mexican blend)

For the Fresh Avocado Salsa:

2 ripe avocados, diced

1 small red onion, finely chopped

1 jalapeño, seeds removed and finely diced (optional)

Juice of 1 lime

1/4 cup fresh cilantro, chopped

Salt, to taste

Prepare the Avocado Salsa: In a medium bowl, combine the diced avocados, red onion, jalapeño (if using), lime juice, and cilantro. Gently mix and season with salt to taste. Set aside.

    Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until soft. Stir in the minced garlic and cook for an additional minute.

      Season the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Break it up with a wooden spoon and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

        Add Spices: Stir in cumin, chili powder, paprika, and season with salt and pepper. Reduce the heat to low and let simmer for another 2-3 minutes, allowing the flavors to meld.

          Warm the Tortillas: In a separate dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.
