Ingredients

4 large russet potatoes

1 cup fresh broccoli florets, chopped

1 cup sharp cheddar cheese, shredded

1/2 cup sour cream

2 tablespoons butter

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

Optional: Chopped green onions or chives, for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

Prepare Potatoes: Wash the russet potatoes thoroughly and prick each one with a fork several times. This allows steam to escape while baking.

Bake Potatoes: Place the pricked potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until the potatoes are tender when pierced with a fork.

Cook Broccoli: While the potatoes are baking, bring a small pot of water to a boil. Add the chopped broccoli and blanch for about 2-3 minutes, until vibrant green and tender-crisp. Drain and set aside.

Mix Filling: In a mixing bowl, combine the sour cream, butter, garlic powder, onion powder, and half of the shredded cheddar cheese. Mix well until smooth. Gently fold in the blanched broccoli. Season with salt and pepper to taste.

Stuff Potatoes: Once the potatoes are done baking, remove them from the oven. Allow them to cool slightly before handling. Carefully cut each potato lengthwise down the center, and gently fluff the insides with a fork. Spoon the broccoli and cheese mixture into each potato, packing it in generously.

Top with Cheese: Sprinkle the remaining cheddar cheese over the top of the stuffed potatoes.

Final Bake: Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

Garnish and Serve: Remove from the oven, garnish with chopped green onions or chives if desired, and serve hot!
