2 salmon fillets (about 6 oz each)

2 tablespoons olive oil

3 cloves garlic, minced

Zest and juice of 1 large lemon

Salt and pepper, to taste

4 cups fresh spinach

1 tablespoon butter

1 teaspoon red pepper flakes (optional, for heat)

Lemon wedges, for serving

Fresh parsley, chopped (for garnish)

Prepare the Marinade: In a small bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, salt, and pepper. This will be your marinade.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 10 minutes (you can also prepare this in advance and let it marinate in the fridge for up to 30 minutes).

      Heat the Pan: In a large skillet, heat a non-stick pan over medium-high heat. Add 1 tablespoon of butter and allow it to melt and bubble.

        Cook the Salmon: Remove the salmon from the marinade (reserve the marinade) and place the fillets skin-side down in the pan. Cook for about 4-5 minutes, then carefully flip and cook for an additional 3-4 minutes or until the salmon is cooked through and flakes easily with a fork.

          Sauté the Spinach: In the same pan, add the reserved marinade and bring it to a simmer. Then, add the fresh spinach and toss it in the sauce until wilted—this should take about 2-3 minutes. If desired, sprinkle in red pepper flakes for an added kick.

            Plate and Serve: On each plate, create a bed of sautéed spinach, place the cooked salmon on top, and garnish with lemon wedges and chopped parsley. Drizzle any remaining sauce from the pan over the salmon for extra flavor.
