Ingredients

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 cups fresh spinach

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

Fresh basil leaves for garnish (optional)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.

Sauté the Shrimp: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp and season with salt, pepper, and red pepper flakes if using. Cook for 2-3 minutes on each side until the shrimp turn pink and opaque. Transfer the cooked shrimp to a plate and set aside.

Prepare the Alfredo Sauce: In the same skillet, reduce the heat to low and add the heavy cream. Stir in the grated Parmesan cheese, mixing until it's melted and creamy. If the sauce is too thick, gradually add a bit of the reserved pasta water until the desired consistency is achieved.

Combine: Add the fresh spinach to the sauce and stir until wilted (about 1-2 minutes). Then, add the cooked fettuccine and shrimp back into the skillet. Gently toss everything together to coat the pasta with the sauce.

Serve: Taste and adjust seasoning with salt and pepper, if necessary. Plate the pasta and garnish with fresh basil leaves if desired. Enjoy your Shrimply Delicious Spinach Alfredo Pasta!
