4 medium sweet potatoes

1 lb ground turkey or beef

1 packet taco seasoning (or homemade blend)

1 cup canned black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheese (cheddar, pepper jack, or a blend)

1 avocado, diced

½ cup sour cream or Greek yogurt

¼ cup fresh cilantro, chopped

Lime wedges, for serving

Salt and pepper, to taste

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly, then poke several holes in each with a fork. Place them on a parchment-lined baking sheet, drizzle with olive oil, and sprinkle with salt. Roast in the oven for 45-50 minutes, or until tender.

      Cook the Meat: While the sweet potatoes are roasting, heat a skillet over medium heat. Add the ground turkey or beef, stirring and breaking it up until evenly browned. Drain excess fat if necessary.

        Season the Meat: Add taco seasoning to the browned meat, along with a splash of water (about 2 tablespoons). Stir well and let simmer for 5 minutes. Then, mix in the black beans, corn, and diced tomatoes. Cook for an additional 3-5 minutes until everything is heated through.

          Stuff the Sweet Potatoes: Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Slice each potato lengthwise and gently squeeze to open them up. Use a fork to fluff the insides slightly.

            Load ‘em Up: Spoon the taco filling generously into each sweet potato half. Top with shredded cheese and return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
