Ingredients

1 lb (450g) boneless, skinless chicken breasts, thinly sliced

2 cups mixed bell peppers, sliced (red, yellow, and green)

1 cup snap peas

1 small onion, sliced

3 cloves garlic, minced

2 tablespoons fresh ginger, minced

1 cup broccoli florets

2 cups cooked jasmine rice (or rice of choice)

¼ cup teriyaki sauce

2 tablespoons soy sauce (low sodium)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 tablespoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Instructions

Prep the Ingredients: Begin by slicing the chicken breasts and vegetables. Make sure to mince the garlic and ginger for easy incorporation later.

Cook the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken and stir-fry for 5-7 minutes or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.

Stir-Fry the Vegetables: In the same skillet, add the sesame oil. Toss in the sliced onion, minced garlic, and ginger. Sauté for about 1-2 minutes until fragrant. Then, add the bell peppers, snap peas, and broccoli florets. Stir-fry for another 3-4 minutes until the vegetables are vibrant and slightly tender but still crisp.

Combine Chicken and Sauce: Return the cooked chicken to the skillet with the vegetables. Pour in the teriyaki sauce and soy sauce, stirring well to coat all the ingredients evenly. Cook for an additional 2-3 minutes, allowing the sauce to get sticky and flavorful.

Serve: Divide the cooked jasmine rice onto plates. Top with the Teriyaki chicken stir-fry mixture. Garnish with sesame seeds and sliced green onions for added flavor and presentation.

Enjoy: Dig in while it's hot! This dish is packed with flavor and can be customized with your favorite vegetables.
