Quick Teriyaki Salmon with Steamed Broccoli

2 Salmon fillets (about 6 oz each)

1/4 cup soy sauce (low-sodium preferred)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil (for cooking)

1 tablespoon sesame seeds (for garnish)

1 bunch of broccoli, cut into florets

1 teaspoon olive oil

Salt and pepper to taste

Cooked rice or quinoa (optional for serving)

Marinate the Salmon: In a small bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, minced garlic, and grated ginger. Place the salmon fillets in a shallow dish and pour the marinade over them. Let it marinate for at least 15 minutes while you prepare the broccoli.

    Steam the Broccoli: Fill a medium saucepan with about an inch of water and place a steamer basket over it. Bring the water to a boil. Add the broccoli florets to the steamer basket. Cover and steam for 5-7 minutes until the broccoli is bright green and tender-crisp. Drizzle with olive oil and season with salt and pepper before removing it from heat.

      Cook the Salmon: Heat a large non-stick skillet over medium heat and add the sesame oil. Once hot, carefully remove the salmon from the marinade (saving the marinade for later) and add the fillets to the skillet, skin-side down (if it has skin). Cook for about 5-7 minutes, then flip the salmon and pour the reserved marinade over it.

        Glaze the Salmon: Cook for an additional 3-4 minutes until the salmon is cooked through and flakes easily with a fork, spooning the sauce over the top to glaze it.
