Ingredients

12 oz (340g) spaghetti or your favorite pasta

1 ½ cups cherry tomatoes, halved

3 cloves garlic, minced

¼ cup fresh basil leaves, chopped

1 teaspoon balsamic vinegar

¼ cup olive oil, plus more for drizzling

Salt and pepper, to taste

½ cup grated Parmesan cheese (optional)

1 teaspoon red pepper flakes (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

Prepare the Bruschetta Topping: While the pasta cooks, in a mixing bowl, combine the halved cherry tomatoes, minced garlic, fresh basil, balsamic vinegar, ¼ cup olive oil, salt, pepper, and red pepper flakes (if using). Gently toss until the tomatoes are well coated.

Combine Pasta and Topping: In the pot used for cooking the pasta, return the drained spaghetti. Pour the bruschetta mixture over the pasta. Add reserved pasta water as needed to create a light sauce. Toss everything together until well combined and evenly coated.

Serve: Plate the pasta and drizzle with extra olive oil. Top with grated Parmesan cheese if desired. Serve immediately and enjoy!
