2 tablespoons vegetable oil

1 cup broccoli florets

1 red bell pepper, sliced thin

1 yellow bell pepper, sliced thin

1 cup snap peas, ends trimmed

1 medium carrot, julienned

2 green onions, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

For the Peanut Sauce:

3 tablespoons creamy peanut butter

2 tablespoons soy sauce

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

1 tablespoon rice vinegar

1 tablespoon water (more for desired consistency)

Prepare the Peanut Sauce: In a small bowl, whisk together the peanut butter, soy sauce, honey (or maple syrup), sesame oil, rice vinegar, and water until smooth. Adjust the water as needed for your desired consistency. Set aside.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.
