1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup granulated sugar

1/2 teaspoon vanilla extract

1 egg

1 cup fresh raspberries (plus more for topping)

For the Topping:

1/2 cup sour cream

2 tablespoons powdered sugar

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

        - Press the mixture firmly into the bottom of a greased mini muffin tin (or silicone molds) to form a crust.

          Create the Cheesecake Filling:

            - In a mixing bowl, beat the softened cream cheese with an electric mixer until creamy.

              - Add the granulated sugar, vanilla extract, and egg, and continue to beat until smooth and well blended.

                - Gently fold in the fresh raspberries until evenly distributed.

                  Assemble and Bake:

                    - Spoon the cheesecake mixture over the crust in each muffin tin, filling them about 2/3 full.

                      - Bake in the preheated oven for about 15-18 minutes, or until the centers are set but a bit jiggle remains.

                          Prepare the Topping:
