1 cup unsweetened shredded coconut

1 cup almond flour

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 tsp vanilla extract

1/4 tsp salt

2 cups fresh raspberries (or frozen, thawed)

1/4 cup honey or agave syrup

1 tbsp lemon juice

1 tbsp cornstarch

1/2 tsp vanilla extract

1/2 cup dark chocolate chips

1 tbsp coconut oil

Prepare the Coconut Base:

    - Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper.

      - In a large mixing bowl, combine the shredded coconut, almond flour, honey (or maple syrup), melted coconut oil, vanilla extract, and salt. Mix until it forms a sticky dough.

        - Press the coconut mixture evenly into the bottom of the prepared baking pan to form the base layer. Bake for 15-20 minutes, until golden brown. Allow to cool slightly.

          Make the Raspberry Filling:

            - In a medium saucepan over medium heat, combine the raspberries, honey (or agave), lemon juice, cornstarch, and vanilla extract. Cook while gently mashing the raspberries with a fork until they break down and the mixture starts to thicken (about 5-7 minutes).

              - Once thickened, remove from heat and let it cool slightly.

                Assemble the Bars:

                  - Pour the raspberry filling over the baked coconut base, spreading it evenly.

                    - Optional: You can use a spatula to create swirls by gently mixing the raspberry filling with the coconut base.

                      - Place the assembled bars in the refrigerator while you prepare the chocolate topping.

                        Prepare the Chocolate Topping:
