Ingredients

For the Fruit Filling:

3 cups fresh peaches, peeled and sliced

2 cups fresh raspberries

1/2 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

1/2 teaspoon cinnamon

For the Cobbler Topping:

1 cup all-purpose flour

1/3 cup granulated sugar

1 teaspoon baking powder

1/4 teaspoon salt

1/4 cup unsalted butter, melted

1/2 cup milk (whole or plant-based)

1 teaspoon vanilla extract

Optional: 1/4 cup rolled oats for added texture

For Serving:

Vanilla ice cream or whipped cream (optional)

Instructions

Preheat the Oven:

Preheat your oven to 350°F (175°C).

      Prepare the Fruit Filling:

In a large mixing bowl, combine the sliced peaches and raspberries. Add the sugar, lemon juice, vanilla extract, cornstarch, and cinnamon. Gently toss the mixture until the fruit is well-coated. Pour this fruit filling into a greased 9x13 inch baking dish, spreading it evenly.

          Make the Cobbler Topping:

In another mixing bowl, whisk together the flour, sugar, baking powder, and salt. In a separate small bowl, combine the melted butter, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. If you are using rolled oats, fold them in for extra texture.

              Assemble the Cobbler:

Scoop spoonfuls of the cobbler batter over the fruit filling. It’s okay if some of the filling is visible; the cobbler will bake up beautifully. Use a spatula to spread the batter slightly, if needed, but avoid completely mixing it with the fruit.

                  Bake the Cobbler:

Place the baking dish in the preheated oven and bake for about 35-40 minutes, or until the topping is golden brown and a toothpick inserted into the topping comes out clean.

                      Cool and Serve:

Allow the cobbler to cool for about 10-15 minutes before serving. Serve warm as is, or enjoy with a scoop of vanilla ice cream or a dollop of whipped cream for that extra indulgence!
