Reese's Cheesecake Bars

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsweetened cocoa powder

½ cup granulated sugar

1/2 cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

1 cup powdered sugar

1 cup creamy peanut butter

2 large eggs

1 tsp vanilla extract

For the topping:

1 cup chopped Reese’s Peanut Butter Cups

1 cup whipped cream (optional)

Optional: drizzles of chocolate syrup and peanut butter

Instructions
 

Prepare the crust: Preheat your oven to 325°F (165°C). In a medium-sized mixing bowl, combine the graham cracker crumbs, cocoa powder, granulated sugar, and melted butter. Mix until well combined and press the mixture firmly into the bottom of a 9x9 inch (or equivalent) baking pan lined with parchment paper.

    Make the cheesecake filling: In a large mixing bowl, using an electric mixer, beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar and mix until well incorporated. Next, add the creamy peanut butter and continue to beat until the mixture is smooth.

      Add eggs and vanilla: Add in the eggs, one at a time, beating well after each addition. Finally, mix in the vanilla extract until everything is fully integrated.

        Assemble the bars: Pour the cheesecake filling over the prepared crust, using a spatula to spread it evenly. Sprinkle the chopped Reese’s Peanut Butter Cups on top of the cheesecake layer, gently pressing them in.

          Bake: Bake in the preheated oven for 25-30 minutes, or until the center looks set and only slightly jiggly. Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours, preferably overnight to allow it to set completely.

            Slice and Serve: Once chilled, remove the bars from the baking pan using the parchment paper. Cut into squares and top with whipped cream if desired. For an extra touch, drizzle chocolate syrup and peanut butter over each bar before serving.
