Roasted Cauliflower Tacos

1 medium head of cauliflower, cut into bite-sized florets

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon chili powder

½ teaspoon garlic powder

Salt and pepper to taste

8 small corn or flour tortillas

1 avocado, sliced

1 cup cherry tomatoes, halved

½ cup red cabbage, finely chopped

¼ cup fresh cilantro, chopped

Lime wedges, for serving

Optional: Hot sauce, for additional heat

Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the cauliflower: In a large bowl, combine the cauliflower florets, olive oil, smoked paprika, cumin, chili powder, garlic powder, salt, and pepper. Toss well until the cauliflower is evenly coated with the spices.

      Roast the cauliflower: Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Roast in the preheated oven for about 25-30 minutes, stirring halfway through, until the cauliflower is tender and golden brown.

        Warm the tortillas: While the cauliflower is roasting, warm the tortillas. You can do this by placing them in a dry skillet over medium heat for about 30 seconds on each side or wrapping them in aluminum foil and placing them in the oven during the last 5 minutes of roasting.

          Assemble the tacos: Once the cauliflower is roasted, remove it from the oven. To assemble each taco, place a generous amount of roasted cauliflower in the center of each tortilla. Top with avocado slices, cherry tomatoes, and chopped red cabbage.

            Garnish and serve: Sprinkle fresh cilantro over the top of the tacos and serve with lime wedges on the side. Drizzle with hot sauce if desired for an extra kick.
