200g assorted cured meats (e.g., prosciutto, salami, chorizo)

150g assorted cheeses (e.g., aged cheddar, brie, blue cheese)

1 cup seasonal vegetables (e.g., bell peppers, zucchini, mushrooms)

1 cup assorted olives (green and black)

1 cup mixed nuts (e.g., almonds, walnuts, pecans)

2 tablespoons olive oil

1 tablespoon balsamic vinegar

2 teaspoons fresh rosemary, chopped

2 teaspoons fresh thyme, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly cracked black pepper to taste

Optional: fresh baguette or crackers for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: Wash and chop the seasonal vegetables into bite-sized pieces. Place them in a mixing bowl.

      Season the Veggies: Drizzle the olive oil and balsamic vinegar over the vegetables. Sprinkle with rosemary, thyme, garlic powder, onion powder, salt, and pepper. Toss until the vegetables are well coated.

        Arrange the Ingredients: On a large baking sheet or roasting pan, spread the seasoned vegetables out in a single layer.

          Add Meats and Cheeses: Next to the vegetables, arrange the assorted cured meats and cheeses in an appealing pattern, allowing for some space in between.

            Roast: Place the baking sheet in the preheated oven and roast for 20-25 minutes or until the vegetables are tender and lightly caramelized, and the cheese is melting slightly.
