2 cups fresh corn kernels (or frozen, thawed)

2 jalapeños, diced (seeds removed for milder heat)

1 tablespoon olive oil

1 teaspoon smoked paprika

½ teaspoon cumin

Salt and pepper, to taste

8 oz cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese

½ cup fresh cilantro, chopped (plus extra for garnish)

Juice of 1 lime

Tortilla chips, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Corn and Jalapeños: On a baking sheet, spread out the corn kernels and diced jalapeños. Drizzle with olive oil and sprinkle with smoked paprika, cumin, salt, and pepper. Toss to coat evenly. Roast in the preheated oven for 15-20 minutes, or until the corn is golden and slightly charred.

      Prepare the Dip Mixture: While the corn and jalapeños are roasting, in a large mixing bowl, combine the softened cream cheese and sour cream. Mix well until smooth and creamy.

        Combine the Ingredients: Once the corn and jalapeños are roasted, remove them from the oven and let them cool slightly. Add the roasted mixture to the cream cheese and sour cream blend. Stir in the cheddar cheese, chopped cilantro, and lime juice. Mix until fully incorporated.

          Bake the Dip: Transfer the dip mixture to a baking dish and spread it evenly. Optionally, sprinkle a little extra cheddar cheese over the top for a cheesy crust. Bake in the oven at 400°F (200°C) for 20-25 minutes, or until the top is bubbly and golden.
