Roasted Garlic and Broccoli Pita Pizza

2 whole wheat pitas

1 cup broccoli florets (fresh or frozen)

4 cloves of garlic, peeled

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1/4 cup sun-dried tomatoes, chopped

1 tablespoon fresh lemon juice

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Garlic: On a small piece of aluminum foil, place the peeled garlic cloves. Drizzle with a bit of olive oil, sprinkle with a pinch of salt, and wrap tightly to create a packet.

      Roast the Garlic: Place the garlic packet onto the oven rack and roast for about 20 minutes, or until the cloves are soft and golden. Remove from the oven and let cool.

        Prepare the Broccoli: While the garlic is roasting, bring a pot of water to a boil. Add the broccoli florets and blanch for about 3 minutes until bright green and slightly tender. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again and set aside.

          Assemble the Pitas: Place the whole wheat pitas on a baking sheet. Drizzle with olive oil and season with salt, pepper, and red pepper flakes.

            Spread the Roasted Garlic: Once cooled, squeeze the roasted garlic cloves out of their skins and mash them with a fork. Spread an even layer of the roasted garlic onto each pita.

              Add Toppings: Distribute the blanched broccoli florets, sun-dried tomatoes, and shredded mozzarella evenly over each pita. Top with crumbled feta cheese.

                Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is bubbly and the edges of the pita are crispy.

                  Finishing Touch: Remove the pizzas from the oven and drizzle with fresh lemon juice. Garnish with fresh basil leaves if desired.
