Roasted Garlic Corn Pizza

Ingredients
  

1 pre-made pizza dough (or homemade)

1 cup sweet corn kernels (fresh or canned)

1 whole head of garlic

1 tablespoon olive oil (for roasting garlic)

1 tablespoon olive oil (for drizzling)

1 cup mozzarella cheese, shredded

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 teaspoon crushed red pepper flakes (optional)

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

Fresh basil leaves for garnish

Cornmeal (for pizza peel)

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice the top off of the whole head of garlic to expose the cloves.

        - Drizzle 1 tablespoon of olive oil over the exposed garlic, wrap it in aluminum foil, and place it in the oven.

          - Roast for about 30-35 minutes or until the cloves are tender and lightly brown. Allow it to cool before using.

            Prepare the Pizza Dough:

              - If using pre-made dough, let it rest at room temperature for about 20 minutes. If making homemade, follow your dough recipe and allow it to rise.

                - Preheat your pizza stone or baking sheet in the oven at a high setting (around 475°F or 245°C) for about 30 minutes.

                  Mix the Base:

                    - Once the roasted garlic is cool, squeeze the cloves out of their skins into a bowl. Mash them with a fork.

                      - In a small bowl, mix the mashed garlic with ricotta cheese, olive oil, sea salt, and black pepper until smooth.

                        Assemble the Pizza:

                          - On a floured surface, stretch or roll out your pizza dough to your desired thickness.

                            - Sprinkle cornmeal on your pizza peel (or the baking sheet) to prevent sticking, then transfer the stretched dough to the peel.

                              - Spread the garlic-ricotta mixture evenly across the dough.

                                - Sprinkle mozzarella cheese and corn kernels on top.

                                  - Finish with grated Parmesan cheese and crushed red pepper flakes if desired.
