1 medium head of cauliflower, cut into florets

1 whole bulb of garlic

2 tablespoons olive oil

1/4 cup plain Greek yogurt (or sour cream for creaminess)

1/4 cup grated Parmesan cheese

Fresh chives, chopped (for garnish)

Optional: A sprinkle of smoked paprika or nutmeg for added flavor

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of the garlic bulb, exposing the individual cloves. Drizzle with a teaspoon of olive oil and wrap it tightly in foil. Place it in the oven and roast for 30-35 minutes, until tender and caramelized.

    Prepare the Cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 8-10 minutes, or until tender when pierced with a fork. Drain and set aside.

      Blend It All Together: Once the garlic is cool enough to handle, squeeze the caramelized cloves out of their skins into a large mixing bowl. Add the drained cauliflower, Greek yogurt, Parmesan cheese, and the remaining tablespoon of olive oil.
