Roasted Garlic Sweet Potato Mash

2 large sweet potatoes (about 1.5 lbs), peeled and cubed

1 head of garlic

2 tablespoons olive oil

2 tablespoons unsalted butter

½ cup milk (or dairy-free alternative)

Salt, to taste

Black pepper, to taste

Fresh chives or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Garlic: Cut the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and bake in the preheated oven for about 30-35 minutes, until caramelized and soft.

      Boil the Sweet Potatoes: While the garlic is roasting, place the cubed sweet potatoes in a large pot of salted water. Bring to a boil and cook for about 15-20 minutes, or until the sweet potatoes are tender when pierced with a fork. Drain and set aside.

        Mash the Sweet Potatoes: In a large mixing bowl or using a potato masher, combine the drained sweet potatoes and the roasted garlic (squeeze out the cloves from their skins). Add the butter, remaining tablespoon of olive oil, and milk.

          Mix and Season: Mash everything until smooth and creamy, adjusting the milk for desired consistency. Season with salt and black pepper to taste. Mix well to ensure everything is fully combined.

            Garnish and Serve: Transfer the sweet potato mash to a serving dish and garnish with chopped fresh chives or parsley if desired.
