4 salmon fillets, skin-on (about 6 oz each)

2 cups broccoli florets

3 tablespoons olive oil, divided

1 lemon, zested and juiced

2 teaspoons fresh dill, chopped (or 1 teaspoon dried)

2 teaspoons fresh parsley, chopped (or 1 teaspoon dried)

2 cloves garlic, minced

Salt and pepper to taste

1 teaspoon crushed red pepper flakes (optional)

Lemon wedges for serving

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy clean-up.

    Prepare the Veggies: In a mixing bowl, toss the broccoli florets with 1 tablespoon of olive oil, salt, pepper, and a pinch of crushed red pepper flakes if using. Spread the broccoli out on one side of the prepared baking sheet.

      Season the Salmon: In a small bowl, mix together the remaining olive oil, lemon zest, lemon juice, garlic, dill, parsley, salt, and pepper. Place the salmon fillets on the other side of the baking sheet, skin-side down. Brush the herb mixture generously over the salmon fillets.

        Roasting: Place the baking sheet in the preheated oven. Roast for 15-20 minutes, or until the salmon is cooked through (internal temperature of 145°F or 63°C) and the broccoli is tender with crispy edges.

          Serve: Remove from the oven and let it rest for a couple of minutes. Serve the salmon with the roasted broccoli and lemon wedges on the side for extra zing.
