Ingredients

1 pound fresh salmon fillet, skin removed

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1 cup fresh blueberries

1/4 cup honey

2 tablespoons apple cider vinegar

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon fresh lemon juice

1 teaspoon grated fresh ginger

8 large romaine or butter lettuce leaves

1/4 cup finely chopped red onion

1/4 cup cilantro, chopped

Lime wedges for serving

Instructions

Prepare the Salmon: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Place the salmon fillet on the sheet, then drizzle it with olive oil and season with garlic powder, salt, and black pepper. Bake for 15-20 minutes, or until the salmon flakes easily with a fork.

Make the Blueberry Glaze: While the salmon is baking, combine the fresh blueberries, honey, apple cider vinegar, soy sauce, lemon juice, and grated ginger in a small saucepan. Cook over medium heat, stirring occasionally until the blueberries break down and the mixture thickens slightly, about 5-7 minutes. Remove from heat and set aside.

Assemble the Wraps: Once the salmon is cooked, allow it to cool slightly before flaking it into large chunks. Take each lettuce leaf and layer it with a generous portion of flaked salmon, a spoonful of the blueberry glaze, chopped red onion, and fresh cilantro.

Serve: Place the assembled lettuce wraps on a serving platter and squeeze fresh lime juice over the top just before serving. Drizzle any remaining blueberry glaze over the wraps for extra flavor.

Enjoy: These wraps can be served as a light lunch, appetizer, or a fun addition to a dinner spread!
