1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup honey

1 large egg

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup shelled pistachios, roughly chopped

Flaky sea salt, for topping

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Cream the Butter and Sugars: In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar with an electric mixer until the mixture is light and fluffy, about 2-3 minutes.

      Add the Honey and Egg: Mix in the honey, egg, and vanilla extract until fully combined and smooth.

        Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking soda, and salt until evenly mixed.

          Combine Wet and Dry Ingredients: Gradually add the dry mixture into the wet mixture, beating at a low speed until just combined. Be careful not to overmix.

            Fold in the Pistachios: Gently fold in the chopped pistachios until evenly distributed throughout the dough.

              Scoop the Dough: Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
