Sausage and Cheddar Egg Muffins

6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 cup cooked and crumbled breakfast sausage (about 2-3 links or 1 cup ground sausage)

1/2 cup diced bell pepper (any color)

1/4 cup finely chopped green onions

1 tsp garlic powder

1 tsp onion powder

1/2 tsp black pepper

1/2 tsp salt

Preheat the Oven: Preheat your oven to 350°F (175°C). If you are using muffin liners, line a 12-cup muffin tin; otherwise, spray the muffin tin with cooking spray.

    Whisk the Eggs: In a large mixing bowl, whisk together the eggs and milk until fully combined and slightly frothy. This will add air to the eggs, making your muffins fluffy.

      Add Cheese & Sausage: Stir in the shredded cheddar cheese, cooked sausage, diced bell pepper, and green onions. Mix well to evenly distribute all ingredients.

        Season the Mixture: Add the garlic powder, onion powder, black pepper, and salt. Mix until everything is well coated in the egg mixture.

          Fill the Muffin Tin: Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full. This will allow for the muffins to rise without overflowing.

            Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the muffins are golden brown and a toothpick inserted in the center comes out clean.

              Cool and Serve: Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then, carefully remove the muffins and let them cool on a wire rack for a few more minutes before enjoying.

                Storage: These muffins can be stored in an airtight container in the fridge for up to 5 days or frozen for up to 3 months. Reheat in the microwave for 30 seconds before serving.
