8 lamb chops, about 1 inch thick

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

4 cloves garlic, minced

1 teaspoon Dijon mustard

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

½ cup breadcrumbs (panko breadcrumbs preferred for extra crunch)

Zest of 1 lemon

Lemon wedges, for serving

Prepare the Marinade: In a medium bowl, combine the chopped rosemary, thyme, minced garlic, Dijon mustard, olive oil, salt, and black pepper. Mix thoroughly to form a paste.

    Marinate the Lamb: Rub the herb mixture generously over both sides of the lamb chops. Ensure they are well-coated. Cover the lamb and let it marinate in the refrigerator for at least 30 minutes (up to 2 hours for deeper flavor).

      Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

        Coat with Breadcrumbs: In a shallow dish, mix the panko breadcrumbs with lemon zest. Press each lamb chop, one at a time, into the breadcrumb mixture to evenly coat both sides.
