Savory Baked Chicken and Vegetable Casserole

2 cups cooked chicken, shredded or diced

1 cup broccoli florets

1 cup carrots, sliced

1 cup bell peppers, diced (red, yellow, or green)

1 cup cooked quinoa or brown rice

1 can (15 oz) cream of mushroom soup (or homemade)

1 cup chicken broth

1 cup shredded cheese (cheddar or mozzarella)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

1 teaspoon olive oil

1/2 cup breadcrumbs (optional, for topping)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped broccoli, sliced carrots, and diced bell peppers. Sauté for about 5-7 minutes, until the vegetables are tender but still crisp.

      Mix the Ingredients: In a large mixing bowl, combine the cooked chicken, sautéed vegetables, cooked quinoa (or rice), cream of mushroom soup, chicken broth, garlic powder, onion powder, dried thyme, and salt and pepper. Mix well until everything is evenly combined.

        Add Cheese: Stir in half of the shredded cheese into the mixture, saving the other half to sprinkle on top later.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

            Top with Cheese and Breadcrumbs: Sprinkle the remaining shredded cheese over the top. If desired, add breadcrumbs atop the cheese for extra crunch.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the casserole is bubbly and the cheese is golden brown.
