200g feta cheese, crumbled

4 large eggs

1 cup cherry tomatoes, halved

1 medium zucchini, diced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley or dill for garnish

Crusty bread for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Baking Dish: In a medium baking dish, drizzle 1 tablespoon of olive oil to coat the bottom.

      Add Vegetables: Spread the halved cherry tomatoes and diced zucchini evenly across the dish.

        Add Feta: Crumble the feta cheese over the vegetables, ensuring it is spread out evenly.

          Season: Drizzle the remaining olive oil over the feta and vegetables. Sprinkle with dried oregano, garlic powder, salt, and pepper.

            Make Wells for Eggs: Using a spoon, create four small wells in the feta and vegetable mixture, making sure to not disturb the feta too much.

              Add Eggs: Gently crack an egg into each well, being careful not to break the yolks.

                Bake: Place the dish in the preheated oven and bake for about 20-25 minutes, or until the eggs reach your desired doneness (the whites should be set, and yolks should be slightly runny if you prefer that).

                  Garnish: Once baked, remove the dish from the oven and let it cool for a couple of minutes. Sprinkle freshly chopped parsley or dill over the top.
