Ingredients
  

  • 0.907 lbs turkey breast, boneless and skinless
  • 0.25 cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 1 whole lemon, juiced
  • 1 whole lemon, zested
  • none fresh parsley for garnish (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a large baking dish with a little olive oil.
  • In a large bowl, whisk together olive oil, minced garlic, chopped rosemary, thyme, sage, Dijon mustard, honey, salt, black pepper, paprika, lemon juice, and lemon zest until well combined.
  • Place the turkey breast inside the bowl with the marinade and ensure it is well coated. For optimal flavor, cover and marinate in the refrigerator for at least 1 hour, or up to overnight.
  • Remove the turkey from the marinade and place it in the prepared baking dish. Pour any remaining marinade over the turkey to enhance the flavor.
  • Roast the turkey in the preheated oven for about 50-60 minutes, or until the internal temperature reaches 165°F (75°C). Baste occasionally with the pan juices for added moisture.
  • Once cooked, remove the turkey from the oven and let it rest for 10-15 minutes covered with aluminum foil. This ensures the juices redistribute for a moist slice.
  • Slice the turkey breast into thick, juicy slices and arrange on a serving platter. Garnish with fresh parsley if desired.
