1 lb (450g) large shrimp, peeled and deveined

1 cup quinoa

2 cups vegetable or chicken broth

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Juice of 1 lemon

Zest of 1 lemon

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

Lemon wedges, for serving

Prepare the Quinoa: Rinse the quinoa under cold water in a fine-mesh strainer to remove the bitter coating called saponin. In a medium saucepan, bring the vegetable or chicken broth to a boil. Add the quinoa, cover, and reduce the heat to low. Let it simmer for about 15 minutes or until all the liquid is absorbed. Remove from heat and fluff with a fork.

    Cook the Shrimp: While the quinoa is cooking, heat a large skillet over medium heat. Add the butter. Once melted, add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

      Add Shrimp: Add the shrimp to the skillet in a single layer. Season with salt and pepper. Cook for about 2-3 minutes on one side, then flip and cook for an additional 2-3 minutes, or until the shrimp are pink and opaque.

        Combine Flavors: Add the lemon juice and zest to the shrimp and stir well to combine. Cook for an additional minute to let the flavors meld.

          Serve: In a serving bowl, spoon the fluffed quinoa and top it with the garlic butter shrimp. Garnish with chopped fresh parsley and serve with lemon wedges on the side for an extra zest.
