2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 teaspoon black pepper

1/2 cup unsalted butter, chilled and cubed

1 cup shredded sharp cheddar cheese

1 cup diced cooked ham (preferably smoked or honey-glazed)

3/4 cup buttermilk

1 tablespoon fresh chives, chopped (optional for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and black pepper. Whisk until well mixed.

      Cut in Butter: Add the chilled, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the mixture until it resembles coarse crumbs.

        Add Cheese and Ham: Fold in the shredded sharp cheddar cheese and diced cooked ham until the mixture is evenly distributed.

          Incorporate Buttermilk: Make a well in the center of the mixture and pour in the buttermilk. Gently mix until just combined, being careful not to overwork the dough.

            Shape the Biscuits: Turn the dough out onto a floured surface and pat it into a rectangle about 1 inch thick. Use a biscuit cutter or a round glass to cut out biscuits. Place them on the prepared baking sheet, leaving some space between each.
