Savory Italian Sausage Pasta Skillet

12 oz penne pasta

1 lb Italian sausage (sweet or spicy, casings removed)

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (14 oz) diced tomatoes (with juices)

2 cups fresh spinach

1 tsp Italian seasoning

1 tsp red pepper flakes (optional)

1/2 cup grated Parmesan cheese

2 tbsp olive oil

Salt and black pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Brown the Sausage: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once heated, add the Italian sausage. Use a spatula to break it up into small pieces. Cook for about 5-7 minutes until browned and cooked through. Remove the sausage from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and cook until translucent, about 3 minutes. Add the minced garlic and diced bell pepper, cooking for another 3-4 minutes until the peppers soften.

        Combine Ingredients: Return the cooked sausage to the skillet. Stir in the can of diced tomatoes (with their juices), cooked penne pasta, and Italian seasoning. Mix well and let everything cook together for about 5 minutes, allowing the flavors to meld.

          Add Spinach: Stir in the fresh spinach and cook until wilted, about 2 minutes. If desired, sprinkle in red pepper flakes for an extra kick. Season with salt and black pepper to taste.

            Finish with Cheese: Remove the skillet from the heat and toss in the grated Parmesan cheese, mixing until melted and well combined.

              Serve: Garnish the pasta skillet with fresh basil leaves. Serve hot with extra Parmesan on the side, if desired.
