Savory Mushroom and Spinach Quesadillas

Ingredients
  

1 tablespoon olive oil

1 cup mushrooms, sliced (such as cremini or button)

2 cups fresh spinach, chopped

1 clove garlic, minced

1 teaspoon dried oregano

Salt and pepper, to taste

1 ½ cups shredded mozzarella cheese

4 large flour tortillas

1 tablespoon butter (for grilling)

Optional toppings: sour cream, salsa, or guacamole

Instructions
 

Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and cook for about 5 minutes or until softened and golden brown. Add minced garlic and dried oregano, cooking for another minute until fragrant.

    Add Spinach: Stir in the chopped spinach and cook until it wilts, about 2-3 minutes. Season with salt and pepper to taste. Remove from heat and set aside.

      Assemble Quesadillas: Lay one tortilla flat on a clean surface. Sprinkle ¼ cup of shredded mozzarella cheese evenly over half of the tortilla. Add a generous scoop of the mushroom and spinach mixture on top of the cheese, then sprinkle another ¼ cup of cheese over the filling. Fold the tortilla in half to cover the filling.

        Cook the Quesadilla: In the same skillet (or a separate pan if needed), melt ½ tablespoon of butter over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on one side until golden brown and crispy. Flip carefully and butter the second side, cooking for another 3-4 minutes until the cheese is melted and the tortilla is crisp.

          Repeat: Repeat the assembly and cooking process with the remaining tortillas, filling, and butter.

            Serve: Cut the quesadillas into wedges and serve warm with your choice of toppings like sour cream, salsa, or guacamole.
