Savory Sausage and Spinach Stuffed Shells

20 jumbo pasta shells

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 lb Italian sausage (removed from casing)

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.

        Cook the Sausage: Add the Italian sausage to the skillet, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 6-8 minutes. Drain excess fat if necessary.

          Add Spinach: Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and allow to cool slightly.

            Prepare Filling: In a large bowl, combine the cooked sausage mixture with ricotta, mozzarella, 1/4 cup of Parmesan, Italian seasoning, salt, and pepper. Mix until well combined.

              Stuff the Shells: Spread 1 cup of marinara sauce on the bottom of a greased 9x13 inch baking dish. Carefully fill each jumbo shell with the sausage and spinach mixture and place them in the dish, open side up.

                Top with Sauce and Cheese: Once all shells are filled, pour the remaining marinara sauce over the stuffed shells. Sprinkle the remaining 1/4 cup of Parmesan cheese on top.

                  Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                    Garnish and Serve: Once baked, remove from the oven and let it cool slightly. Garnish with fresh basil leaves, if desired. Serve hot and enjoy!
