In a large skillet over medium heat, add the Italian sausage. Use a spatula to break it into bite-sized pieces as it cooks. Sauté until browned and cooked through, about 7-10 minutes. Once done, remove the sausage from the skillet and set it aside, leaving any drippings in the pan.
In the same skillet, add the olive oil followed by the sliced onion. Sauté for about 3 minutes until it becomes translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.
Toss the trimmed green beans into the skillet. Sauté for about 5 minutes, stirring occasionally, until they begin to soften but are still crisp.
Add the halved cherry tomatoes and the Italian seasoning. Stir everything together, and season with salt and pepper to taste. Cook for another 3-4 minutes, allowing the tomatoes to soften slightly.
Return the cooked sausage to the skillet. Mix everything together and let it heat through for an additional 2-3 minutes.
If using, sprinkle the grated Parmesan cheese over the mixture and stir until it melts slightly.
