Ingredients

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg, beaten

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta: In a large pot, bring water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain the shells and set aside to cool slightly.

Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, beaten egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.

Stuff the Shells: Using a spoon, carefully fill each cooked pasta shell with the spinach and cheese mixture. Place the stuffed shells seam-side up in a greased baking dish.

Add the Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring they are well covered.

Top with Cheese: Sprinkle the remaining 1/2 cup of mozzarella cheese over the top of the marinara sauce.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly golden.

Serve: Let the stuffed shells cool for a few minutes before serving. Garnish with fresh basil, if desired.
