2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup cold unsalted butter, diced

3/4 cup shredded sharp cheddar cheese

1/2 cup sun-dried tomatoes, chopped (oil-packed for best flavor)

1/4 cup fresh basil leaves, chopped (or 2 teaspoons dried basil)

1/2 cup buttermilk

1 large egg

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Whisk together until thoroughly combined.

      Cut in Butter: Add the cold, diced butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs.

        Add Cheese & Tomatoes: Fold in the shredded cheddar cheese and the chopped sun-dried tomatoes. If using fresh basil, add it at this stage.

          Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk and the egg until well combined.

            Mix Wet and Dry Ingredients: Pour the buttermilk mixture into the dry ingredients. Stir gently until just combined; be careful not to overmix. The dough will be slightly sticky.

              Shape the Scones: Turn the dough out onto a lightly floured surface. Gently pat it into a circle about 1-inch thick. Cut the dough into wedges (like a pizza) or use a round cutter for traditional scone shapes.

                Transfer and Top: Place the scones onto the prepared baking sheet. If desired, sprinkle extra cheese on top of each scone for added flavor.

                  Bake: Bake for 15-20 minutes or until the scones are golden brown and a toothpick inserted in the center comes out clean.

                    Cool and Serve: Remove the scones from the oven and let them cool slightly on a wire rack. Serve warm or at room temperature with butter or your favorite spread.
