For the filling:

1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

2 large carrots, diced

1 cup green peas (fresh or frozen)

1 cup chicken broth

2 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper to taste

2 tbsp olive oil

For the sweet potato topping:

2 large sweet potatoes, peeled and cubed

3 tbsp unsalted butter

¼ cup milk (or plant-based alternative)

Salt and pepper to taste

½ tsp cinnamon (optional)

Instructions
 

Prepare the sweet potato topping:

    - In a large pot, bring salted water to a boil. Add the sweet potatoes and cook until tender, about 15-20 minutes. Drain and return to the pot.

      - Add the butter, milk, salt, pepper, and cinnamon (if using) to the sweet potatoes. Mash until smooth and creamy. Set aside.

        Cook the turkey filling:

          - In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.

            - Add the ground turkey, breaking it up with a spoon, and cook until browned, about 5-7 minutes.

              - Stir in the carrots, peas, chicken broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Simmer for 10 minutes until slightly thickened.

                Assemble the pie:

                  - Preheat your oven to 400°F (200°C).

                    - In a baking dish (approximately 9x13 inches), spread the turkey filling evenly on the bottom. Top with the sweet potato mash, smoothing it out with a spatula.

                      Bake:

                        - Place the assembled shepherd’s pie in the preheated oven and bake for 25-30 minutes, or until the top is slightly golden.

                          Serve:

                            - Remove from the oven and let it sit for about 5 minutes before serving. Enjoy your hearty, comforting dish!
