Ingredients

4 bone-in, skin-on chicken thighs

2 large sweet potatoes, peeled and cut into 1-inch cubes

1 cup BBQ sauce (choose your favorite)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon honey (optional, for extra sweetness)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Chicken: In a mixing bowl, add the chicken thighs. Pour half of the BBQ sauce over the chicken and use your hands or a brush to coat the chicken evenly. Set aside the remaining BBQ sauce for later.

Season the Sweet Potatoes: In another bowl, combine the sweet potato cubes with olive oil, garlic powder, smoked paprika, thyme, salt, and pepper. Toss well to ensure all the pieces are coated with the seasoning.

Arrange on a Sheet Pan: On a large sheet pan lined with parchment paper or aluminum foil for easy cleanup, arrange the seasoned sweet potatoes in a single layer. Place the BBQ-coated chicken thighs on top of the sweet potatoes.

Bake: Bake in the preheated oven for about 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the sweet potatoes are tender.

Glaze the Chicken: In the last 10 minutes of baking, brush the remaining BBQ sauce over the chicken thighs. If using honey, drizzle it over the sweet potatoes at this stage to caramelize them slightly.

Broil (Optional): If you like your chicken skin extra crispy, switch the oven to broil and broil for an additional 2-4 minutes, keeping a close eye to avoid burning.

Garnish & Serve: Remove the tray from the oven, sprinkle with chopped fresh parsley, and let it rest for a few minutes. Serve warm as a delicious, hearty meal.
