2 cups fresh or frozen sweet corn kernels

4 medium potatoes, peeled and diced

2 cloves garlic, minced

1 red bell pepper, diced

2 cups vegetable broth

2 cups whole milk (or half-and-half for a richer flavor)

1/2 cup heavy cream

4 tbsp unsalted butter

1 tsp smoked paprika

1 tsp dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and red bell pepper, cooking until the onion is translucent and fragrant, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
