Ingredients

1 lb large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 cup corn (fresh or canned)

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and black pepper to taste

Optional: 1 tablespoon hot sauce for an extra kick

Instructions

Prepare the Shrimp: In a large pot, bring water to a boil. Add the shrimp and boil for about 3-4 minutes, or until they turn pink and opaque. Drain and set aside to cool. Once cooled, chop the shrimp into bite-sized pieces.

Mix the Dressing: In a small bowl, whisk together the lime juice, olive oil, garlic powder, salt, black pepper, and hot sauce (if using). Adjust seasoning to taste.

Combine the Ingredients: In a large mixing bowl, combine the cooked shrimp, diced avocados, cherry tomatoes, red onion, corn, and cilantro.

Dress the Salad: Pour the dressing over the salad mix and gently toss to combine without mashing the avocados.

Chill and Serve: Refrigerate for about 15-20 minutes to allow the flavors to meld. Serve chilled or at room temperature as a refreshing appetizer or light meal.
