Shrimp Lettuce Wraps with Pineapple Glaze

1 lb large shrimp, peeled and deveined

1 cup fresh pineapple, diced (reserve some for garnish)

2 tbsp soy sauce

2 tbsp honey

1 tbsp rice vinegar

1 tbsp fresh lime juice

1 clove garlic, minced

1 tsp ginger, grated

1 tbsp sesame oil

1/4 tsp red pepper flakes (optional, for a bit of heat)

1 head of butter lettuce or romaine, leaves separated

1/4 cup green onions, chopped

1/4 cup chopped fresh cilantro (plus more for garnish)

1/4 cup crushed peanuts or cashews (for crunch)

Lime wedges (for serving)

Instructions
 

Prepare the Pineapple Glaze: In a small saucepan over medium heat, combine the diced pineapple, soy sauce, honey, rice vinegar, lime juice, garlic, ginger, and red pepper flakes. Bring it to a simmer and cook for about 5-7 minutes, until the pineapple breaks down slightly and the mixture thickens. Stir occasionally, then set aside to cool.

    Cook the Shrimp: In a large skillet, heat the sesame oil over medium-high heat. Add the peeled and deveined shrimp to the skillet. Season with salt and pepper. Sauté for 3-4 minutes or until the shrimp turn pink and are cooked through.

      Add the Glaze: Pour half of the pineapple glaze over the cooked shrimp. Toss to coat evenly and cook for another 2 minutes. Remove from heat when the shrimp are well-glazed.

        Assemble the Wraps: Take a lettuce leaf and spoon in a generous portion of the glazed shrimp. Top with chopped green onions, cilantro, and crushed peanuts or cashews. Drizzle additional pineapple glaze over the top if desired.

          Serve: Arrange the prepared lettuce wraps on a platter. Garnish with reserved diced pineapple and extra cilantro as needed. Serve with lime wedges on the side for an added zest.
