Simple Creamy Tomato Basil Soup with Grilled Cheese

2 tablespoons olive oil

1 medium onion, diced

3 garlic cloves, minced

2 cans (14.5 oz each) diced tomatoes (preferably San Marzano)

2 cups vegetable or chicken broth

1 teaspoon sugar

1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)

Salt and pepper to taste

1 cup heavy cream (or coconut cream for a dairy-free version)

1 cup fresh basil leaves, roughly chopped (for garnish)

4 slices of bread (your choice, such as sourdough or whole grain)

4 slices of cheddar cheese (or your favorite cheese)

2 tablespoons butter

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute, being careful not to burn it.

    Combine Ingredients: Add the canned tomatoes (with juices), broth, sugar, dried basil, salt, and pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, allowing the flavors to meld together.

      Blend the Soup: After simmering, use an immersion blender or transfer the mixture to a traditional blender to puree until smooth. If using a traditional blender, be sure to blend in batches and allow steam to escape to prevent spillage.
