1 lb (450g) shrimp, peeled and deveined

4 medium zucchini, spiralized into noodles

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

1 tablespoon fresh lemon juice

Salt and black pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prepare the Zucchini Noodles: Use a spiralizer to create zucchini noodles. If you don't have a spiralizer, you can use a vegetable peeler to make thin ribbons. Set the zucchini noodles aside.

    Cook the Shrimp: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the minced garlic and cook for about 1 minute, just until fragrant. Be careful not to let it burn.

      Add Shrimp: Increase the heat to high and add the shrimp to the skillet. Season with salt, black pepper, and red pepper flakes (if using). Cook for 2-3 minutes or until the shrimp are pink and opaque, turning them halfway through.

        Combine: Once the shrimp are cooked, remove them from the skillet and set aside. In the same skillet, add the remaining 2 tablespoons of butter and the spiralized zucchini noodles. Sauté the noodles for about 2-3 minutes, tossing frequently, until they are just tender but still slightly crunchy.

          Mix Together: Return the cooked shrimp to the skillet, pour in the lemon juice, and toss everything together until well combined. Adjust seasoning if needed.

            Serve: Remove from heat, garnish with fresh parsley, and serve with lemon wedges on the side.
