Ingredients

4 medium zucchinis, sliced into half-moons

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional, for heat)

1 tablespoon fresh lemon juice

2 tablespoons fresh parsley, chopped

Parmesan cheese shavings (for serving, optional)

Instructions

Prep the Zucchini: Wash the zucchinis thoroughly and trim off the ends. Slice them into half-moon shapes about ½ inch thick.

Heat the Oil: In a large sauté pan, heat the olive oil over medium heat. Make sure the oil is hot enough to coat the bottom of the pan.

Sauté the Garlic: Add the minced garlic to the pan and sauté for about 30 seconds until fragrant, being careful not to burn it.

Add the Zucchini: Toss the sliced zucchini into the pan with the garlic. Spread them out evenly and let them cook undisturbed for about 2-3 minutes, allowing them to get a nice sear.

Stir and Season: After the initial sear, stir the zucchini gently to promote even cooking. Season with salt, pepper, and red pepper flakes if using. Sauté for an additional 5-7 minutes, or until the zucchini is tender yet still slightly crisp.

Finish with Lemon and Herbs: Remove the pan from heat. Squeeze lemon juice over the sautéed zucchini and fold in the fresh parsley. Adjust the seasoning if necessary.

Serve: Transfer the sautéed zucchini to a serving dish. If desired, sprinkle with Parmesan cheese shavings before serving for an extra burst of flavor.
