1 lb large shrimp, peeled and deveined

1 bell pepper, sliced (red, green or yellow)

1 small red onion, sliced

2 cloves garlic, minced

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

1 tablespoon fresh lemon juice

Fresh parsley, chopped (for garnish)

4 large aluminum foil sheets
