Ingredients
  

  • 4.0 large potatoes, peeled and cubed
  • 2.0 tablespoons unsalted butter
  • 0.5 cup whole milk
  • 0.0 to taste salt and pepper
  • 1.0 cup breakfast sausage, casings removed
  • 4.0 large eggs
  • 1.0 cup shredded cheddar cheese
  • 0.25 cup green onions, chopped
  • 1.0 teaspoon garlic powder
  • 1.0 teaspoon paprika
  • 0.0 for the air fryer cooking spray or olive oil

Instructions
 

  • Prepare the Potatoes: Start by placing the cubed potatoes in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot.
  • Mash the Potatoes: Add butter, whole milk, salt, and pepper to the drained potatoes. Mash until smooth and creamy. Adjust seasoning if necessary. Set aside.
  • Cook the Sausage: In a skillet over medium heat, crumble the breakfast sausage and cook until browned and fully cooked, approximately 6-8 minutes. Stir in the garlic powder and paprika, cooking for an additional minute for flavor. Remove from heat.
  • Prepare the Eggs: In the same skillet (if desired, or use a separate one), crack the eggs and cook sunny-side up or scrambled, based on your preference. Season with salt and pepper.
  • Combine Ingredients: In a large mixing bowl, combine the creamy mashed potatoes with the cooked sausage, half of the shredded cheese, and half of the green onions. Stir until evenly distributed.
  • Air Fry the Mash: Preheat your air fryer to 375. Lightly coat the air fryer basket with cooking spray or olive oil. Scoop the mashed mixture into the basket, smoothing it out with a spatula. Air fry for about 10-12 minutes until it's golden and slightly crispy on top.
  • Serve: Once air-fried, remove the mash from the basket and top with the cooked eggs. Sprinkle the remaining cheddar cheese and green onions on top. Serve hot and enjoy!
