1 lb large shrimp, peeled and deveined

8 oz linguine or spaghetti

4 tablespoons unsalted butter

4 tablespoons extra virgin olive oil

5 cloves garlic, minced

1/2 cup dry white wine (like Sauvignon Blanc)

1 lemon, juiced and zested

1/4 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

1/4 cup fresh parsley, finely chopped

1/2 cup cherry tomatoes, halved (optional)

Grated Parmesan cheese for serving (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add linguine or spaghetti and cook according to package instructions until al dente. Drain, reserving about 1 cup of pasta water for later. Set aside.

    Sauté the Shrimp: In a large skillet over medium-high heat, add 2 tablespoons of butter and 2 tablespoons of olive oil. Once the butter is melted, add the shrimp in a single layer. Season with salt, black pepper, and red pepper flakes. Cook for 2-3 minutes on one side until pink, then flip the shrimp and cook for another 1-2 minutes until fully cooked. Remove shrimp from skillet and set aside.

      Make the Garlic Sauce: In the same skillet, add the remaining 2 tablespoons of olive oil and 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute or until fragrant, being careful not to burn it.

        Add Wine and Lemon: Pour in the dry white wine, scraping the bottom of the skillet to deglaze and release any flavorful bits. Bring the mixture to a simmer and let it cook for about 2-3 minutes, allowing the alcohol to cook off. Stir in the lemon juice and zest.

          Combine: Return the cooked shrimp to the skillet, along with the cooked pasta. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency. Stir in the fresh parsley and halved cherry tomatoes if using.
