Slow Cooked Chili Cheese Macaroni

2 cups elbow macaroni

1 pound ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 can (10 oz) tomato sauce

1 medium onion, diced

3 cloves garlic, minced

2 cups shredded cheddar cheese

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

2 cups beef or vegetable broth

Optional toppings: sour cream, green onions, jalapeños, and extra cheese

Instructions
 

Sauté the Aromatics: In a skillet, over medium heat, cook the diced onion until softened (about 5 minutes). Add minced garlic and cook for another minute until fragrant. Transfer to the slow cooker.

    Brown the Meat: In the same skillet, add the ground beef or turkey. Season with salt, black pepper, chili powder, cumin, and smoked paprika. Cook until browned, breaking it up with a spatula (about 7-10 minutes). Drain any excess grease and add it to the slow cooker.

      Combine Ingredients: In the slow cooker, add the elbow macaroni, kidney beans, black beans, diced tomatoes, tomato sauce, and beef broth. Stir until well combined.

        Slow Cook: Cover and cook on low for 4-5 hours or high for 2-3 hours, until the pasta is tender and the flavors meld together.

          Add Cheese: About 30 minutes before serving, stir in 1.5 cups of shredded cheddar cheese until melted and creamy. If the mixture is too thick, add a splash of broth or water to reach your desired consistency.
