Ingredients

2 pounds beef sirloin, cut into 1-inch cubes

1/2 cup unsalted butter (1 stick)

6 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

1 teaspoon onion powder

1 teaspoon black pepper

2 teaspoons salt (adjust to taste)

1/4 cup soy sauce

1/4 cup beef broth

1 tablespoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Instructions

Prep the Beef: Begin by trimming any excess fat from the beef sirloin cubes. Pat the beef dry using paper towels to ensure a good sear later.

Sear the Beef (Optional): In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once it's sizzling, add the beef cubes in batches, searing them until browned on all sides (about 2-3 minutes each). This step enhances the flavors but can be skipped if you're short on time.

Combine Ingredients: In a slow cooker, add the seared beef (or raw, if skipping the searing), minced garlic, rosemary, thyme, onion powder, black pepper, salt, soy sauce, beef broth, Worcestershire sauce, and the remaining butter (cut into small pieces).

Cook: Set your slow cooker to low heat and cover it. Let it cook for 6-8 hours, or on high for 3-4 hours, until the beef is tender and easily pulls apart with a fork.

Thicken the Sauce (Optional): If you prefer a thicker sauce, about 30 minutes before serving, mix 2 tablespoons of cornstarch with a little water to create a slurry. Stir this into the mixture in the slow cooker and let it cook for the remaining time uncovered.

Garnish and Serve: Once cooked, taste and adjust the seasoning if necessary. Sprinkle with freshly chopped parsley before serving. Enjoy these garlic butter beef bites with crusty bread, over rice, or alongside your favorite vegetables.
